Celebrate the summer with this healthful & delicious effervescent summer elixir from Glen Ivy’s Chef Bill. Chock-filled with antioxidants, pomegranates are renowned for their health properties. From heart health to cancer-prevention, pomegranates are truly a super fruit. The ginger adds a flavorful kick, while serving as a powerful anti-inflammatory, healing any redness from too much fun in the sun. Meant to be enjoyed over ice, this healthful treat will satisfy even those with the sweetest tooth!
Effervescent Pomegranate and Ginger Elixir

2 cups 100% pomegranate juice
1/3 cup honey, preferably lavender
½ cup fresh-squeezed lemon juice
1 teaspoon fresh ginger thinly sliced
5 cup sparkling water ice
6 thinly cut lemon slices
6 mint sprigs
In small pot, bring the pomegranate juice with the ginger to a low simmer. Simmer [2-3] minutes. Remove from heat and allow to cool. Stir in the honey until dissolved. Cover and refrigerate until chilled. Strain into a large pitcher
In the pitcher, combine the chilled pomegranate infusion, lemon juice, sparkling water, ice, and lemon slices. Stir to mix. Pour Effervescent Pomegranate Elixir into six glasses, garnish with fresh sprigs of mint, and serve.
Breath deeply, drink slowly, and open your senses to the delicate and soothing combination of pomegranate and lemon.
