If your Mom loves gardens then she will love a day at Glen Ivy Hot Springs! Stretching over 12 acres, Glen Ivy Hot Springs spa property features a variety of palms, towering bamboo, aged oaks, 100 year old grapefruit tree, with both tropical rain forest and arid zones along with a succulent wall that was built by guests on Earth Day.  Spa guests are invited to take our weekly Botanical Tour offered every Friday at 1pm, lead by Patrick Mitchell, Glen Ivy Director of Landscapes and Sustainability.

As the lush gardens grow, the landscaped grounds provide the perfect place to celebrate and socialize. If you’re looking for a creative Mother’s Day gift pairing for your spa and garden loving Mom, give her a Glen Ivy Spa gift card along with one of these unique gifts for garden lovers:

  • Culinary Herb Grow Bottles: Hand-crafted from recycled wine bottles, these bottles are available in a variety of herbs. She can even use them multiple times with a variety of herbs.
  • Heirloom Seeds (SIxteen) Art Packs: Each packet features artwork by a different New York artist, unique petal-shaped flaps, and inside, a generous helping heirloom seeds.
  • Hanging Globe  Vases: She’ll create a magical indoor garden with these beautiful (and unique) vases
  • Succulent Wall: A vertical garden of her very own (just like the one we did at the Hot Springs for Earth Day!).

Sunflower Sushi at Glen Ivy Hot Springs, Corona CA

We are excited to announce a new dining experience at Glen Ivy Hot Springs in Corona!

It is spring time in Southern California and just about everywhere you go, you will run into a field of bright yellow California bush sunflowers in bloom… and what better time to announce the opening of our new Sunflower Sushi at the Hot Springs!

It is the natural beauty, temperate climate, year-round harvests from our organic gardens, local farms, and the great Pacific that have inspired my fun and creative menu of Temake, Sushi and Shaved Ice. A fusion of some of my favorite flavors from Japan to Mexico, Sunflower features a selection of dynamic finger-friendly foods that I know will complement your Spa day. High-protein sushi and temaki are perfect for lunch, a midday snack or light nourishment between treatments. Colorful and refreshing shaved ice or raspado as it’s called in Mexico is made our way, with natural Agave syrup and seasonal fruit juices—like citrus, pomegranate and hibiscus—and yes, it’s “shaved” to order. The only hard part will be to choose a flavor—we have over 20!

You will also be glad to know that everything we serve here is made fresh to order daily and requires the minimum of utensils (usually just your fingers will do). Dining here is informal and all about what makes you feel most comfortable. Please feel free to find space here at the counter, go next door to Tiempo Lounge or enjoy pool side. Additionally, look for this mouth watering sushi and temaki at the Paradise Bar, on our Cabañas menu or in Café Solé.

Just in case you aren’t a sushi afficianado, here is a quick and easy guide to translating our menu (yes. please feel free download a copy Sunflower Sushi right here!) and don’t forget to Keep Eating Healthy!

Keep cooking healthy!

Patrick Mitchell, Glen Ivy Hot Springs Director of Landscapes and Sustainability, Shares thoughts about Connecting with Nature and Earth Day

Patrick Mitchell, Glen Ivy Director of Landscapes and SustainabilityWhen I began to think of the theme for this month, “Connecting with Nature,” and what I would write, many thoughts raced through my mind. It’s a big topic and one we often take for granted. We fail to observe nature all around us like the red-tail hawk that soars far above us or the dandelion that sprouts in the cracks of concrete on the city sidewalk we stroll over every day. Each of these missed connections is a missed opportunity for personal growth and improved mental and physical health.

Then I considered writing about therapeutic gardens. But felt that this topic might be limiting to a general audience. To recognize the value of plants in therapeutic settings, however, I will recommend the book Green Nature/Human Nature: The Meaning of Plants In Our Lives by Charles Lewis and published by the University of Illinois Press. Mr. Lewis covers so many important aspects of the human-plant relationship that even an avid gardener, naturalist and restoration ecologist like myself found it enlightening.

As an undergraduate student at Prescott College in Arizona, I learned to recognize that ecology wasn’t something that only happened in natural areas, but rather, it was all around us no matter where we were.  I thought I could write about urban ecology and the great efforts at re-wilding that are occurring in many cities across the country but ultimately decided that it is far more important that we go out and volunteer to plant trees or a create a vegetable garden in a corner of our yard than it is for me to tell you about what others are doing.

I thought about sharing some of my personal experiences connecting with nature like watching wolves take down an injured elk in the Yellowstone Valley or learning about agriculture from my grandfather, an Iowa farmer who would dig both hands into his topsoil and raise a handful to his nose to take in its aroma.  He did this everyday like a religious ritual and it taught me how important it was to know the piece of earth you dwell on. These experiences and many like them have created in me a deep and intimate connection with the nature around me.

And so, I have ultimately decided that this month, this Earth Day, everyday, I will simply suggest that we all try to connect with nature by watching the birds outside our cubicle windows, or by planting tomatoes on our apartment balcony. Next time you are taking a walk, take the time to look at the tiny plants that grow along your path. Observe the changes in color, light and sounds that occur as seasons change. Or take the time to come to Glen Ivy…lay back on a cozy float in the Lounge Pool and watch the sun as it crosses over the Santa Ana Mountains and maybe you will notice the red-tail hawk that soars above.

See you soon,
Patrick Mitchell

Another Fabulous Glen Ivy Spa-tini from Executive Chef Bill Wavrin

Hibiscus and Blueberry Refresco

Hibiscus and Blueberry Refresco, or Jamaica tea, Recipe from Glen Ivy SpaWhat a great way to start off any day. They call it the drink of the Pharaohs, who enjoyed it as a cooler on those hot North African days. In Mexico hibiscus teas, or Jamaica, can be found on almost any corner and our neighbors south of the border they have been enjoying this tea as a sweetened refresco for centuries.

Studies have shown that drinking [2] cups of hibiscus tea can lower systolic blood pressure, lower cholesterol and is a wonderful cooler. The hibiscus flower contains many antioxidants that help in protecting cells from free radicals. Marrying the hibiscus teas with blueberries gives a huge boost to benefiting one’s healthy regiment by heightening the antioxidants levels over the top. The chiles offer a surprising piquant twist to a wonderful traditional drink. Zest it up & Buen Provecho!!
